If you're in Odisha then "Machha or Fish" is a must try. The authentic odia cuisine consists of many non-vegetarian delicacies. So today in Sunday kitchen we have made the most popular dish from the state and that is "Machha Besara or Sorisha Machha Besara"
Rohu Fish (Cleaned & cut in to pieces)
2-4 Dry Red Chilly
2 tsp Turmeric powder
1tsp chilli powder or as per taste
10 garlic cloves
5-6 Green chilies
1 Tbsp mustard seeds
1 tomato (fine chopped)
4 tsp mustard oil
1/4 tsp cumin
1/4 Poppy seeds(Posto)
Masala : First of all dry roast the red chili and cumin on a low heat. Then grind it finely. And soak the poppy seed, mustard seeds in the water.
Marinate the Rohu fish with salt, turmeric powder and prepared masala. Keep it to rest for 15 minutes. Now heat the pan and put mustard oil in it. Once oil heated add the marinated fish and fry it well & keep it aside. Then add the soaked mustard seeds and poppy seeds in a blender and grind it. Then add 3-4 green chillies in it and grind again. Now take add 1 tsp of mustard oil again. Then add the mustard- poppy seed paste in to it. Saute the paste in oil then add 2 sliced green chillies & salt in it. Then add the chopped tomatoes in it saute it again on medium flame. Add some water in it (if required). Once the tomatoes are semi cooked, add the fried fish into the gravy. Then mix it well and cover it with a lid cover. Let it simmer for 10 -15 minutes. Now the aromatic dish is ready to serve on plate. Put some green coriander leaves for garnish and enjoy the meal with rice or roti.
