Ghee Khichdi

When you're in no mood to get sweat in the kitchen, there comes the "Khichdi" to everyone's rescue. It's easy to make and take minutes to please the mood. Today's recipe "Tadke wali Ghee Khichdi"




Ingredients :

1 Cup long basmati rice

1/2 cup Moong dal

1/4 cup green peas

2 Dry red chilli

4-5 Green Chillies

1 Inch Ginger (grated)

1 small tomato chopped

4-5 beans chopped

1 tsp Cumin seeds

1-2 Bay leaf

Pinch of hing

1 tsp turmeric

Salt to taste

Ghee

1 Inch Cinamon stick

4 Green Cardamom

3-4 black pepper

1-2 Chakri



Spice mix :

Dry roast a spoon full of Cumin & 2-3 dry red chilli and crush them together.



Process:

First, dry roast the moong dal and keep it aside. Then clean and wash rice. Heat some ghee in a pressure cooker. Add Bay leaf, Cinamon, Cardamom, Black pepper, Chakri (anasi fula) and stir. Then add the washed rice, moong daal and fry well. Now add turmeric, salt & water. The ratio of the water should be 1:2 & 1/2. The Khichdi should be done with 2 whistles. Now heat some ghee in a pan, add cumin seeds, dry red chillies, bay leaf and let it crackle. Then add grated ginger, hing. Now add the tadka to the Khichdi, stir well. Add a spoonful of ghee and the crushed cumin, red chilli powder on top. The simple yet delicious khichdi is ready to serve. Achar & papad goes best with it.
