No Bake Vanilla Cake

Who doesn't love cakes! Those fluppy, sweeten bites that's just melts in the mouth are just to die for. In DigInMeal's kitchen today, we are baking some super spongy & super fluppy cake, that too without any oven.




Cooking time: 25-30 minutes


Ingredients :

1 Cup Maida

1 & 1/2 cup milk

1/2 cup Ghee

1 tsp Baking powder

1/2 tsp Baking soda

1tsp Vanilla extract/ essence

50-75gm Chopped Dry fruits

1/2 cup sugar or 5-6tbsp Sugar-free powder



Process: first take a strainer and strain the flour in it. Then put the baking powder & soda on the strainer and strain it as well. Then mix these dry ingredients well & keep it aside. Then add the ghee in a blender & churn it for a minute. Then add the sugar in it and blend well. Then take the mixture out and pour it in the dry ingredients slowly. Keep mixing the batter with little portions of the liquid mixture. Once the batter looks smooth add the chopped dry fruits in it. Now keep the batter to rest for 15-30 minutes. After resting, the batter will rise a bit. Then place a flat pan on the gas & preheat the pan on a slow medium flame for 5-8 minutes. Meanwhile, take a non-stick pan (preferably) and grease this with some butter or ghee. Then pour the cake batter in it and dab it to flatten the surface. Then place the pan on the preheated tawa and cover it up with a lid. Check the cake exactly after 20 minutes with a toothpick or a knife. If it comes out clean then the cake is done & turn the gas off. If the cake seems underdone then cover it for 5-10 minutes more. Now cool off the cake to normal temperature and the cake is ready to be served. You can also cut it into pieces & store it in the fridge for 5-6 days.
