Schezwan Chicken

Chilli chicken is a fusion recipe of Indo-Chinese Cuisines which is spicy and a little bit sour and sweet. It is not that too hot or spicy as the name suggests.

Let's try something similar with schezwan sauce. Can present Schezwan chicken either dry or gravy depends upon your choice. You can easily make this delicious dish at home without any great effort.

Marinate

Get all the stuff ready and keep on the site for cooking.

First, cut chicken into small bite-size pieces(best with boneless chicken) and apply salt, egg, schezwan sauce, soya sauce, black pepper. and Chilly sauce ( or green chili paste).



Ingredients

  • 500 g boneless chicken pieces (can be with bone also )

  • 1 teaspoon green chilly paste

  • 2 teaspoon schezwan sauce/chutney

  • 1 teaspoon dark soya sauce

  • 1/2 teaspoon rice vinegar (optional)

  • 1/2 teaspoon chopped garlic

  • 1/2 teaspoon chopped ginger

  • 1/2 cup chopped onion

  • 1 medium onion cut into dice

  • 1 green capsicum cut into dice

  • 1 green chili ( Slits)

  • 1/3 teaspoon black pepper powder

  • 1/2 cup corn starch ( flour)

  • 1 beaten egg

  • 1/2 cup chopped spring onions

  • Salt as per taste

  • 1 teaspoon cooking oil

  • Oil for deep frying

Process:

Next, make a batter with cornflour and beaten egg. Add a small pinch of salt, green chilly paste, and ginger garlic paste into the batter and mix nicely, add some soya sauce and schezwan sauce, black pepper powder. Coat the chicken pieces with this batter evenly from all sides and keep marinated for 10 to 15 minutes to absorb flavors.


Heat some oil for deep fry in a deep vessel pan on medium flame heat. When the oil becomes hot, carefully add the batter coated chicken pieces one by one into the oil and deep fry the chicken pieces till are fried properly and brown in color.



Heat oil in a pan with medium heat flame. Add chopped ginger and garlic. Then add chopped onions and fry till translucent. Add the capsicum and salute in the medium flame.

Add little water and simmer for 30 seconds. After that lower the flame and add the fried chicken pieces and sauces, dark soya sauce, Schezwan sauce, and then add white pepper powder, salt, and cornflour slurry. Stir to incorporate everything. When sauces start to thicken and coat the chicken pieces nicely sprinkle some chopped spring onions and mix well. Taste the seasoning and remove the schezwan chicken. This is how you can make dry Schezwan chicken.



At home and serve with noodles and fried rice.
